My little one has been asking for pancakes a lot more than usual these days. As much as I like pancakes, my fitness goals and digestive tract do not appreciate the carb load. I've been playing with my low-carb banana pancake recipe by adding additional protein and flavors. Last week I doubled up by adding chocolate protein powder and I'm not mad at it. It's moist, dense and filling.
Here's what I changed:
INGREDIENTS
4 Eggs (or 3 eggs and 1 egg white)
2 Bananas
3/4 cup Quick Oats (gluten free for me)
1 tsp Cinnamon
1 scoop Chocolate Protein Powder (or vanilla)
*Butter, spray or oil for griddle/pan
*Toppings of choice

Combine oats, eggs and bananas in a blender and blend until mixed. Add 1 scoop (1 serving) of chocolate flavored protein powder and cinnamon to the blender and blend until all ingredients are mixed together. It is a bit runnier than regular pancakes.
Heat a griddle or pan over medium heat and add your choice of oil. I used butter since I was making regular pancakes for my kids as well. Pour pancake mixture onto pan and cook for 2-3 minutes.
Inspect edges for golden brown look and flip. Cook for 2-3 minutes and done.
This recipe makes 8-10 pancakes. Top with fresh fruit and syrup of choice. I like mine topped with berries and sugar free syrup or pure maple syrup. Sometimes I skip the fresh fruit and top with pure maple syrup. Let me know what you create. Enjoy!
