Calling all pasta lovers! If you're into creamy spicy pasta, this one is totally worth trying. It's quick, easy, and tasty. I think the Boursin cheese really elevates common every day staples like tomatoes and pasta.
To lighten the dish, I only used about a cup (4oz) of plant based pasta (with protein) for the entire dish. The goal was more protein, less pasta.
Vegetarians - This meal can be modified into a vegetarian dish by omitting the chicken. Bake tomatoes and cheese mixture alone for 20 minutes at 400 degrees. Add pasta as directed below.
INGREDIENTS
2 chicken breast, cubed
2 pints cherry tomatoes
2 garlic cloves, sliced or minced
1 shallot, diced
1 tsp Italian seasoning
1/2 tsp paprika
1/2 tsp crushed red pepper flakes (optional - omit or adjust spice to liking)
1/2 onion powder
1 cup bow tie pasta - plant based pasta & gluten free works well too
freshly grated parmesan cheese - optional topping
salt & pepper to taste
1 to 2 tbsp of extra virgin olive oil
PREP
In a medium mixing bowl, add chicken followed by seasonings; salt, pepper, paprika, onion powder, crushed red pepper, Italian seasoning. Combine well.
Preheat oven to 400 degrees.
Prepare a 9x13 Pyrex dish or the equivalent with a light layer of nonstick spray. Add chicken and spread it out in an even layer. Add tomatoes, followed by shallots and garlic. Drizzle olive oil over the top. Lightly season with a final dash of salt and pepper.
Remove Boursin cheese from the package and set in the center of the dish. Place dish in the oven and cook for 35 to 40 minutes.
While the chicken is baking, prepare a cup of bow tie pasta as directed on package and strain.
Remove chicken from the oven. With a wooden spoon or spatula, break the tomatoes open and mix all ingredients together, creating a creamy mixture. Add pasta to dish, mix well and top with parmesan. Place in the broiler or reduce oven heat for cheese to melt. This is quick, about 2 to 3 minutes will do.
Serve as is, pair with your favorite bread or side salad.
