Hey All! I have an ultra quick creamy ramen recipe to share courtesy @kalorismart. They posted this recipe in Swedish a few weeks back and I've managed to modify it with items found in a typical American grocery store. The original recipe will be below the modified version. And if you like ajitama (hard boiled eggs), they are a great little addition according the kids (they made some).
MODIFIED VERSION
3 packages instant ramen (chicken)
1 small red bell pepper, sliced
1 cup brocoli florets
1 batch of green onions, sliced
1/4 cup soybeans (frozen edamame)
1 1/4 cup coconut milk
2 3/4 hot water
1 tbsp red curry paste
1 tbsp soy sauce
1 tsp red pepper flakes
ORIGINAL RECIPE (SWEDISH)
RECEPT (4 PORTIONER)
175 g aggnudlar (egg noodles)
1 buljongtärning, grönsaks (vegetable bouillon cube)
1 liten paprika (small red bell pepper)
250 g broccoli
1/2 liten purjolok (small leek)
100 g sojabönor (soybeans)
300 g rakor (shrimp)
400 g kokosmjölk (coconut milk)
5 dl kokande vatten (hot water)
1 msk röd currypasta (red curry paste)
Smaka av med soja, chiliflakes och ev. lite sötströ (soy sauce, red pepper flakes, stevia)
Notes: I did not have access to egg noodles or leeks. I used green onion and the inexpensive ramen packages with the bouillon seasoning packets included instead of vegetable bouillon. If you have bouillon cubes (vegetable or chicken) I'd use 2 cubes instead of the packets in the ramen (I didn't have any on hand). I also didn't add any stevia as suggested. Adjust the soy sauce and red pepper flakes to your liking. The original recipe doesn't have exact measurements for those. Wing it and taste test.
INSTRUCTIONS
In a stock pot over medium high heat, add ramen, vegetables, bouillon, coconut milk, hot water, shrimp, soy sauce and red pepper flakes. Bring to a boil, cover, cook for 10 to 12 minutes and done!
It's truly one of the quickest and easiest meals I've ever made.
