It's baking day in our house. We're prepping a little sweet treat buffet for Christmas. Here's my favorite holiday treat; a quick peanut butter blossom recipe.
This recipe makes about 24 cookies. Sometimes I end up with 25. Somedays it's 26 cookies. One bag of kisses is more than enough.
INGREDIENTS:
1/2 c. packed (light) brown sugar
1/2 c. sugar
1/2 c. unsalted butter (softened)
1/2 c. creamy peanut butter
1 egg
1 tsp vanilla extract
1 3/4 c. all purpose flour
1 tsp baking soda
1/4 tsp salt
Additional 1/4 c. sugar for rolling
About 24-26 frozen or chilled Hershey's Kisses
My two cents: chill the dough for an hour before baking and freeze the kisses while you chill the dough. This helps keep things intact.
PREP:
Mix brown sugar, sugar, peanut butter and butter together. Add egg, vanilla, salt and baking soda. Mix on low. Slowly add flour and continue to mix on low.
When dough is evenly mixed, roll 1 inch balls with hands. I use a mini scooper to help make even cookies. Take dough ball and roll in sugar (coat evenly). Set on tray or plate.
When done rolling dough (balls) wrap cookies with plastic wrap and refrigerate for an hour. At this point, I also put the kisses in the freezer. I leave the wrapper on until I'm ready to place on cookie.
Heat oven to 375 degrees.
Line cookie sheet with parchment paper.
Bake cookies for 9-11 minutes. Look for a slightly golden brown edges and cracking.
Remove cookies from oven.
Push cold kisses into the center of the cookies.
Let cool completely before storing. (The kiss will harden again).
