If you're thinking eww...Don't knock it until you try it!
I've been trying to incorporate more juices and smoothies into my diet these days. I'm not a fan of sweet smoothies though. After a couple of hit or miss recipes, this one is my favorite. I have one for breakfast or lunch almost every day.
The recipe is not unique to me in any way. I just took a peanut butter recipe from an almond milk carton and added spinach instead of yogurt.
INGREDIENTS:
1 cup almond milk (or milk of choice)
1 cup spinach
1 frozen banana
2 tbsp peanut butter powder
(or 1 tbsp of the real stuff)
PREP:
Add almond milk and spinach to a blender or blender cup. Blend for 10 seconds.
Add peanut butter and the frozen banana. Blend until completely smooth and done.
If you don't like greens, eliminate the spinach and you have a decent peanut butter smoothie. Also one of my go to snacks. Add some protein powder and you have a decent meal replacement shake too. Be warned that protein powder flavors may alter the overall taste.
My smoothie two cents, keep frozen fruit in the freezer. I like to buy extra bananas to freeze them when they're ripe. When strawberries and blueberries are in season, I do the same with them. It's nice to have a go to healthy snack option like smoothies on deck.
