Hey all! I had a late night sweet tooth and only one ripe banana. I knew I wanted to make quick oat cookies with it so here's a modified recipe for a quick small batch of healthier macro friendly cookies. Enjoy!

INGREDIENTS

  • 1 cup quick oats (3/4 cup for smaller banana)

  • 1 large ripe banana

  • 1/4 mini semi-sweet chocolate chips

PREP

Preheat oven to 350 degrees and line a cookie sheet with parchment paper.

In a large mixing bowl, mash banana with a fork. Add oatmeal and chocolate chips to the mashed banana mixture and combine well.

Roll one inch balls and place on lined cookie sheet. For flatter cookies, lightly press down into cookies. I don't mind the balls (don't be naughty).

Place in oven and bake for 10 to 12 minutes.

Let cool and done. A quick and easy late night snack.

For macros, simply add the macros from the oatmeal, banana and choclate chips used. Divide by the amount of cookies made. Example, I made 7 cookies with this recipe.
